Ginger Lime Chicken Bites

This recipe is from the upcoming cookbook, The Healthy Gluten Free Life, which will be released on 2/21/12.  This is not a Paleo only book!  Out of 200 recipes in the book, there are 89 recipes that are already paleo-friendly or can easily be made to be.  The rest, while they do contain grains, are all gluten-free, dairy-free, soy-free, egg-free and bean flour free.  Other paleo-friendly (or easily converted) recipes include Balsamic Chicken, Oriental Chicken Salad, Grilled Lime Chicken, Salisbury Steak with Mushroom Gravy, Italian Meatballs, Pork Chops with Pineapple Mango Salsa, Garlicky Crock Pot Pork Roast, Ginger Salmon, Bay Shrimp Veggie Salad and many more!  You can find out more about the book here.

Ingredients

Chicken:
1 TBSP coconut oil
3 boneless, skinless organic chicken breasts, cut into bite-size pieces

Sauce:
Juice of 1 organic lime
2 TBSP coconut aminos
1 TBSP olive oil
1 tsp freshly grated ginger
1 garlic clove, minced
1 TBSP raw, organic honey
1 tsp granulated onion

Topping:
Chopped green onions
Sesame seeds

Process

  1. Mix sauce ingredients in a small bowl.  Set aside.
  2. Heat oil in a large skillet over medium-high heat.  Add chicken.  Cook chicken, stirring occasionally, until browned and almost done.  About 5 minutes.
  3. Add sauce to skillet, turn heat to low and simmer, uncovered for another 5 minutes, or until chicken pieces are cooked through.
  4. Top chicken bites with chopped green onions and sesame seeds.  Enjoy!

  1. Don’t you just love the coconut aminos?!! I don’t even miss soy sauce anymore with that in my life. I think I’m about to ask them to go steady!!!

  3. Do you find that it doesn’t have the “punch” that soy sauce has? I find that if I convert a recipe and use coconut aminos, it doesn’t turn out as “bright” as the regular one. I think I will try Braggs and see if it turns out better. anyone experience this?

  4. @ Tracy, I agree, coconut aminos lack the punch of soy sauce. I also considered Braggs but, since it’s totally soy, decided against it. I intend to try adding a little more salt (table or kosher, not sea) as I think that is partly what I’m missing from the coconut aminos.

  5. Made this for dinner tonight. Can’t find coconut aminos so used wheat-free soy sauce – Bragg’s. SO DELICIOUS. I recommend this a million times over!

    And I’ve shared on pretty much every FB group I’m in. ha.

  6. Made this the other day with chicken, and tonight with shrimp. I prefer a bit more ginger than the recipe calls for, but it’s SUPER tasty as is.
